Conor Byrne
Conor has worked on and off in the restaurant his parents opened for around 25 years. Today, he leads The Byrnes as General Manager, bringing years of experience and a strong connection to the family business.
Together with Head Chef Christopher King and the dedicated team, Conor aims to continue serving the people of Ennistymon and welcoming visitors, while keeping the restaurant a valued part of the local community.

Head Chef Christopher King brings experience from kitchens around the world, including Michelin-starred restaurants. His award-winning approach combines quality ingredients, local produce and creativity, with every dish thoughtfully prepared to bring flavor and character to the table.
Dalmacia “Shasha” Rynne
Known affectionately as Shasha, she brings 10 years of experience to her role as Front of House Supervisor. With her friendly approach and passion for hospitality, she helps create the warm and welcoming atmosphere The Byrnes is known for. Alongside the team, Shasha is dedicated to making every guest feel at home, ensuring visitors and locals alike enjoy a friendly welcome and a memorable experience.
